Preparation Steps
Prepare the Cauliflower
Preheat your oven to 400°F (200°C). Cut the cauliflower into florets and toss them with olive oil, ras el hanout, salt, and pepper. Spread them out on a baking sheet.
Roast the Cauliflower
Roast the cauliflower in the preheated oven for about 25-30 minutes, or until golden brown and tender, tossing halfway through.
Make the Coconut Creamed Spinach
In a medium saucepan, heat the coconut milk over medium heat. Add the fresh spinach and cook until wilted. Season with salt and pepper to taste.
Prepare the Pickled Raisins
In a small bowl, soak the raisins in warm water for 10 minutes. Drain them and mix with a splash of vinegar and a pinch of salt. Let sit for at least 15 minutes.
Assemble the Dish
On a plate, create a bed of the coconut creamed spinach, top with roasted cauliflower, and garnish with pickled raisins, dried cherries, and fennel fronds.
