Preparation
Prepare the beef
Thinly slice the flank steak against the grain into bite-sized pieces. In a bowl, combine the sliced beef with cornstarch, soy sauce, brown sugar, minced garlic, and grated ginger. Let it marinate for at least 15 minutes.
Cooking
Stir-fry
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated beef and stir-fry for about 3-4 minutes until browned. Remove the beef from the skillet and set aside.
Combine
Return the beef to the skillet, and mix well with the vegetables. Stir-fry for an additional 2 minutes to heat everything through and combine the flavors.

Serve
Serve the Mongolian beef over a bed of cooked rice. Enjoy!
