    Chill glass

    Place a coupe or Nick & Nora glass in the freezer or fill it with ice water to chill while you prepare the cocktail.

    Combine ingredients

    In a mixing glass or cocktail shaker, add the gin, dry vermouth, Lillet Blanc, honey syrup, and fresh lemon juice.

    Add bitters

    Add 2 dashes of orange bitters and 1 dash of Peychaud's (or aromatic) bitters to the mixing glass.

    Add ice and stir

    Fill the mixing glass with large ice cubes (about 4 pieces). Stir gently and continuously for 20–30 seconds (about 20–30 full strokes) until the mixture is well chilled and slightly diluted.

    Prepare glass

    Dump the ice or remove the glass from the freezer. If you used ice water, strain it out and wipe the glass if necessary.

    Strain

    Double-strain the contents of the mixing glass into the chilled coupe using a Hawthorne or julep strainer and a fine mesh strainer (to catch any small ice shards or lemon pulp).

    Express oils

    Take the lemon twist and gently clap it over the drink, skin side down to express the oils across the surface. Optionally, give an orange peel a quick express as well for an additional citrus top note.

    Garnish

    Rub the rim of the glass with the lemon twist, then drop the twist into the cocktail or place it on the rim for aroma.

    Serve immediately. The Weninger is best enjoyed chilled and gently aromatic.
