    Prepare glass

    Chill a coupe or Nick & Nora glass by placing it in the freezer for a few minutes or filling it with ice water while you build the cocktail.

    Juice and measure

    Juice a fresh lemon and measure 0.5 oz of lemon juice. Measure out Suze, mezcal, Dolin Dry, Cocchi Americano, and simple syrup.

    Build and stir

    Fill a mixing glass with plenty of ice. Add 1 oz Suze, 1 oz mezcal, 0.5 oz Dolin Dry, 0.5 oz Cocchi Americano, 0.5 oz fresh lemon juice, 0.25 oz simple syrup and 2 dashes of orange bitters. Stir briskly for 20–30 seconds (about 20–30 full rotations) until the outside of the mixing glass is very cold and the drink is properly diluted (roughly 15–25% dilution).

    Strain and garnish

    Dump the ice or water from the chilled serving glass. Double-strain the cocktail into the chilled coupe or Nick & Nora to remove small ice chips and any pulp. Express a lemon twist over the drink to release oils, run it around the rim of the glass if desired, then discard or drop the twist in as garnish.

    Serve

    Serve immediately. The Suze's bitter gentian notes balanced by the smoky mezcal, floral-quinine from Cocchi and the lemon's brightness make for a layered, aperitif-style sipper.
