Ginger-Lemon Honey Base

Prepare and steep ginger
Peel and thinly slice or grate 2 oz fresh ginger root (about a 1- to 1.5-inch chunk). Place the ginger in a heatproof container and pour 1 cup of hot water (just off boiling) over it. Cover and steep for 10 minutes to extract a bright ginger infusion. For a stronger bite, steep up to 15 minutes.

Strain and sweeten
Strain the ginger infusion into a small bowl or measuring cup, pressing the solids to extract liquid. Discard solids. While the infusion is still warm, whisk in 3 tablespoons honey until fully dissolved. Add 2 tablespoons fresh lemon juice and stir to combine. This yields a balanced ginger-lemon-honey syrup base. Taste and adjust: add up to 1 tablespoon more honey or lemon to suit sweetness/acidity.
Black Tea Concentrate

Brew a strong cup of black tea: place 2 teaspoons loose black tea (or two teabags) into a heatproof cup or small pot. Pour 1 cup boiling water over the tea and steep for 5 minutes for a robust flavor. Strain out leaves or remove bags and let the tea cool slightly (2–3 minutes). If you prefer a more pronounced bergamot note, use Earl Grey; for maltier backbone, use Assam.

If you want a smoother, less astringent finish, briefly chill the brewed tea in the refrigerator or an ice bath for 5 minutes before assembling the drink.
Finish & Serve

Assemble the Not Toddy: In a heatproof mug or a serving glass, combine 3/4 cup of the brewed black tea with 3 tablespoons of the ginger-lemon-honey base (adjust to taste). Stir gently to integrate.

Add 1/4 cup cold water or, for a slightly effervescent variation, 1/4 cup chilled club soda. Stir gently. The total liquid will be approximately 1 cup and a quarter—adjust proportions if you prefer stronger tea or ginger presence.

Garnish and serve: Float 1–2 lemon slices in the cup and add a sprig of fresh mint if using. For a sweet-ginger bite, spear a piece of crystallized candied ginger and rest it on the rim. Serve warm for a comforting, non-alcoholic toddy-like drink; alternatively serve over ice (use 1/2 cup cold tea concentrate + 1/2 cup cold water/soda and pour over ice) for a refreshing iced version.
