    Prepare

    If using egg white, separate and measure 1/2 egg white (about 0.5 unit). Chill a rocks glass or coupe by filling with ice and setting aside.

    Combine ingredients

    In a cocktail shaker add 2 oz bourbon, 0.5 oz rye whiskey, 0.75 oz fresh lemon juice, 0.5 oz agave syrup (1:1) or simple syrup, 0.5 oz peach liqueur, 2 dashes Angostura bitters, and the optional 0.5 egg white. If using smoked salt, add a small pinch now (it will accentuate savory/earthy notes).

    Dry shake (if using egg white)

    If you added the egg white, seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify and build foam.

    Wet shake

    Add ice to the shaker (enough to fill about two-thirds). Shake hard for 12–18 seconds until well chilled and the shaker is frosty.

    Strain

    Discard ice from the chilled glass. Double strain the cocktail into the chilled rocks glass over one large ice cube (or into a coupe if serving straight up), using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any solids.

    Finish

    Express the oils from a lemon twist over the drink and rub the peel around the rim, then drop it in (or place a dehydrated lemon wheel on top). Garnish with a small sprig of thyme if desired. Serve immediately.
