Prepare tools
Have ready a small heavy-bottomed saucepan, a heatproof bowl, a wooden spoon or silicone spatula, a small whisk, a fine mesh sieve (optional), and a container or parchment-lined ramekin to chill the finished butter.
Brown the butter
Place the 1 cup unsalted butter (cut into 1-tablespoon pieces) in the heavy-bottomed saucepan over medium heat. Melt the butter, stirring or swirling occasionally to heat evenly. After the butter foams, continue cooking; solids will darken and a nutty aroma will develop. Watch carefully — when butter reaches a deep golden-brown with small toasty brown bits (about 6–9 minutes total), remove from heat immediately and transfer butter and solids to the heatproof bowl to stop cooking.
Caramelize sugars
While the butter is hot, add 3 tablespoons dark brown sugar and 1 tablespoon Demerara sugar directly to the browned butter. Return the saucepan to very low heat for 1–2 minutes, stirring constantly, just long enough for the sugars to dissolve and begin to caramelize into the butter but not burn. If you prefer, do this step in the original saucepan off heat and whisk vigorously — residual heat is usually enough. The mixture should be glossy and slightly thickened.
Add flavorings
Off heat, whisk in 2 teaspoons aged dark rum (or Brew de Cana if you have it), 1 teaspoon blackstrap molasses, and 1 teaspoon vanilla extract until fully combined. The alcohol scent will calm quickly; these add depth and a molasses note reminiscent of 'brewed' blackened flavors.
Season and finish
Whisk in 1 teaspoon fine sea salt, 1 teaspoon freshly ground black pepper, and 1 teaspoon smoked paprika until smooth. Stir in 1 tablespoon lemon zest and, if using, 1 teaspoon finely chopped fresh thyme. Taste and adjust: add up to 1/4 teaspoon more salt or a pinch more sugar if desired.
Strain and chill (optional)
If you prefer an ultra-smooth butter, strain the mixture through a fine mesh sieve into your prepared container to remove any large browned bits. Otherwise, pour the whole mixture in. Press a piece of plastic wrap directly onto the surface to prevent a skin, and chill in the refrigerator until firm, about 1–2 hours.
Store and serve
Use the Brown Soldier's Butter as a finishing butter for grilled steaks, roasted root vegetables, corn on the cob, or warm bread. It keeps refrigerated for up to 2 weeks in an airtight container or frozen for up to 3 months. Bring to room temperature before serving for easy spreading.
