Prepare bread and spread

Split the ciabatta roll horizontally. In a small bowl, combine the softened butter and garlic paste until smooth. In a separate small bowl, mix mayonnaise and Dijon mustard. Brush the cut sides of the roll lightly with olive oil or melted butter (for toasting) if using.

Optional: Heat a skillet or griddle over medium heat. Place the roll cut-side down on the skillet and toast 1–2 minutes until golden and slightly crisp. Remove and set aside.

Spread the garlic butter evenly on the bottom half of the toasted roll. Spread the mayo-Dijon mixture on the top half.

Warm and layer proteins

If you prefer the sandwich warm, briefly warm the roast beef and smoked turkey slices in a skillet over medium-low heat for about 1 minute per side, or until heated through but not overcooked. On the bottom half of the sandwich, place the provolone or Swiss slice(s). Arrange the warm roast beef evenly over the cheese, then add the smoked turkey (if using).

If you like melted cheese, place the assembled bottom half (with cheese and meat) under a broiler or in a hot skillet for 30–60 seconds until the cheese begins to melt. Watch closely to avoid burning.

Pickles, Veg & Crunch

Assemble vegetables and pickles

Drizzle the torn lettuce with a teaspoon of olive oil and 1/2 teaspoon red wine vinegar; toss lightly and season with a pinch of salt and a grind of black pepper. Layer the dressed lettuce over the meat. Add the thin red onion slices and arrange the dill pickle halves or sliced lengthwise pickles along the sandwich. Scatter pepperoncini or banana pepper rings over the top for brightness and mild heat.

Finish with a light sprinkle of kosher salt and freshly ground black pepper over the vegetables and pickles. If you want an extra kick, add hot sauce to taste (about 1/4 tsp to start). Close the sandwich with the top half of the roll, press gently to compact the layers slightly.

Cut the sandwich in half on the diagonal. Serve immediately while the cheese is warm and bread is crisp. Enjoy with extra pickles or chips on the side.
