Gin-Citrus Cocktail Base
Juice and measure
Juice fresh lemon and lime. Strain seeds and pulp through a fine mesh into a jigger or measuring glass. Measure simple syrup, gin, aperitivo and bitters.
Build and shake
In a cocktail shaker, add gin, fresh lemon juice, lime juice, simple syrup, Aperitivo and 2 dashes of orange bitters. Fill the shaker about two-thirds with ice. Shake vigorously for 10–12 seconds until the shaker is cold to the touch and the mixture is well-chilled and slightly diluted.
Double strain
Double-strain the shaken cocktail into the prepared glass to remove small ice shards and citrus pulp. Aim for a clean, bright pour that leaves some headspace for the sparkling element.
Sparkle & Finish
Top and balance
Gently top the strained cocktail with 2 oz chilled sparkling water (or 1 oz sparkling water + 1 oz champagne if you prefer a wine-lift). Pour slowly down the side of the glass so the carbonation integrates without disturbing the texture too much. Taste briefly and, if desired, add a tiny splash more simple syrup (¼ tsp) if the drink needs a touch more sweetness.
Garnish and aromatic lift
Express a lemon twist over the drink by holding the twist skin-side down above the glass and giving it a quick squeeze to release essential oils, then run the peel around the rim and drop it into the drink. Clap the thyme sprig between your hands (or gently slap it on the back of your hand) to release its oils and rest it in the drink as an aromatic garnish.
Serve immediately. Encourage the guest to sip slowly to appreciate the layered citrus, herbal aperitivo note and the effervescence. Leftovers may be kept briefly on ice but are best enjoyed immediately.
