Chill glass

Place a coupe or martini glass in the freezer for at least 10 minutes or fill it with ice water while you prepare the cocktail to ensure it is well chilled.

Optional mash

If using fresh blackberries for garnish and a touch of flavor, muddle one of the blackberries lightly in a small spoon to release juice; reserve the other for garnish.

Mixing the Nocturna

Dry shake (emulsify)

In a cocktail shaker, combine gin (2 oz), crème de cassis (0.5 oz), fresh lemon juice (0.75 oz), simple syrup (0.25 oz), egg white or aquafaba (1), and activated charcoal powder (1 tsp) if using. Do not add ice yet. Dry shake vigorously for 20–30 seconds until the mixture is frothy and the egg white is fully emulsified. This step builds a silky foam characteristic of the Nocturna.

Wet shake (chill & dilute)

Open the shaker, add a generous handful of ice (about 1 cup). Seal and shake hard for 12–15 seconds until the shaker is cold to the touch (this chills and dilutes the cocktail to balance flavors).

Double strain

Remove the chilled glass from the freezer or dump out the ice water. Using a Hawthorne strainer and a fine mesh (or double strain with a tea strainer), pour the cocktail into the chilled coupe to remove small ice shards and any charcoal lumps for a silky appearance.

Finish & Garnish

Bitters finish

Add 2 dashes of Angostura bitters on top of the foam. Use a toothpick or cocktail pick to gently create a simple pattern (three small concentric circles or a subtle swirl) if desired.

Garnish

Thread the reserved fresh blackberry onto a small pick and lay it across the rim or float it on the foam. Express a lemon twist over the surface to release oils, then drop it in or rest it on the glass edge. Add a micro herb or edible flower if using for contrast.

Serve immediately while the foam is fresh and aromatic. Advise guests to sip slowly to enjoy the evolving textures and the nocturnal, layered flavors of gin, cassis, citrus, and bitters.
