Chill
Refrigerate the Korbel Natural Brut and the two selected juices for at least 2 hours so they are well chilled. Mimosas are best served cold; avoid using ice in the champagne.
If using fresh fruit (orange, grapefruit, pineapple), strain pulp for a smoother drink unless you prefer pulp. Prepare garnishes: slice oranges, hull and slice strawberries, and rinse raspberries.
Mixing & Serving Individual Mimosas
Pouring Ratio
For each flute, pour juice first to avoid excessive foam. Use 1/3 juice to 2/3 Champagne as a classic ratio. Example: for a 6 oz flute, pour 2 oz juice then top with 4 oz Champagne. Adjust to taste (some prefer 50/50 for a fruitier mimosa).
Technique
Hold the flute at a slight angle and slowly pour the Champagne down the side to minimize foam. Pour Champagne gently after the juice to preserve bubbles.
Garnish
Garnish each glass with a thin orange slice on the rim or drop a raspberry/strawberry slice into the flute. If using a maraschino cherry, place it on a pick and rest across the rim.
Batch Serving (Pitcher)
To serve a group, combine chilled juice(s) in a pitcher. Use ice in the pitcher only if juices need to be kept cold — do not add ice to glasses, as it will water down the Champagne.
When ready to serve, pour juice from the pitcher into flutes to fill about 1/3 of each glass, then top with chilled Champagne poured slowly from the bottle.
If offering two juice choices, label small carafes or pitchers so guests can choose. Refill flutes and pitchers as needed.
Quantities & Servings Guidance
One 750 ml bottle of Champagne yields about 24 oz (approx. eight 3 oz pours or six 4 oz pours). Using the classic 1/3 juice : 2/3 Champagne ratio, a bottle will make approximately 6–8 mimosas depending on flute size. The listed juice quantities (3 cups each) provide enough for multiple rounds or for serving a small group; adjust amounts based on guest count.
For a single bottle and two juice options, plan for about 6–8 servings. Keep extra chilled juice on hand for guests who prefer more fruit-forward drinks.
