Preparation
Chill glassware and ingredients
Place Prosecco and chosen juice in the refrigerator until well chilled (ideally 2–4°C / 36–39°F). If short on time, chill glasses in the freezer for 10–15 minutes.
Select juice
Choose one juice: orange for classic, grapefruit for a tangy note, pineapple for tropical sweetness, or pomegranate for a tart, rich flavor. Use fresh-squeezed juice when possible for best flavor and minimal pulp.
Assembling the Mimosa
Pour approximately 2 fl oz (60 ml) of the chosen chilled juice into a clean champagne flute. Pour gently down the side of the glass to avoid excessive mixing.
Slowly top with 6 fl oz (180 ml) of chilled Prosecco. Pour the Prosecco over a spoon or down the side of the glass to preserve carbonation and create a gentle layered effect. The proportion may be adjusted to taste (common ratio 2:1 Prosecco to juice).
Do not stir. Allow the beverage to settle for a few seconds so bubbles and juice integrate naturally.
Garnish & Serve
Garnish as desired: an orange slice or twist for orange juice; a grapefruit twist for grapefruit; a small pineapple wedge on the rim for pineapple; or a few pomegranate seeds dropped into the flute for pomegranate juice.
Serve immediately while cold and bubbly.
