Make the dough

In a large bowl, whisk together 2.5 cups all-purpose flour, 1/4 cup granulated sugar, and 1/2 tsp fine sea salt until evenly combined.

Add the 12 tablespoons cold cubed unsalted butter. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse peas with some pea-sized butter bits remaining (about 6–8 turns).

Sprinkle 6 tablespoons ice water over the mixture, one tablespoon at a time, tossing gently with a fork after each addition. Add only as much water as needed so the dough just comes together when pressed (you may not need all the water).

Turn the dough out onto a lightly floured surface and gather it into a disc (do not overwork). Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes while preparing the filling and topping. Chilling improves flakiness.

Filling - Slow Fade

Prepare the pears: place 4 cups thinly sliced pears into a large mixing bowl. Immediately toss with 1 tablespoon lemon juice to prevent browning.

In a small bowl, whisk together 1.5 tablespoons cornstarch, 1/4 cup honey, 3 tablespoons light brown sugar, 1 teaspoon vanilla extract, 1/2 tsp ground cinnamon, and 1/4 tsp ground cardamom until smooth.

Pour the honey-sugar-cornstarch mixture over the sliced pears and toss gently until the pears are evenly coated. Let the mixture rest for 10 minutes so the cornstarch begins to hydrate and the pear juices loosen.

Fold in 2 tablespoons cold unsalted butter cut into small cubes, distributing them among the pear slices; these will melt into pockets while baking and create richness.

Make the oat crumble: in a small bowl combine 1/2 cup rolled oats, 1/4 cup all-purpose flour, 2 tablespoons packed light brown sugar, and 1/4 teaspoon coarse sea salt. Cut in 2 tablespoons cold unsalted butter with a fork or pastry cutter until the mixture resembles coarse crumbs with some pea-sized butter pieces. Chill until ready to use.

Assemble the galette

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. On a lightly floured surface, roll chilled dough into a roughly 12-inch (30 cm) circle about 1/8–1/4 inch thick.

Transfer the rolled dough to the prepared baking sheet. Spoon the pear filling into the center, leaving a 2-inch border all around. Arrange the pears so they overlap slightly in a single layer; spoon any juices over the fruit.

Sprinkle the oat crumble evenly over the pear filling, leaving the 2-inch border clear.

Fold the dough border up and over the filling in pleats, leaving the center exposed. Press pleats gently to seal. Whisk together 1 whole egg and 1 tablespoon milk to make the egg wash; brush the folded pastry with the egg wash and sprinkle a pinch of extra coarse sea salt over the exposed crust if desired.

For a slow-fade caramelized finish: tent the galette loosely with foil for the first 20 minutes to let the pears soften without over-browning. Bake for 20 minutes, then remove the foil and bake an additional 15–20 minutes until crust is deep golden and juices bubble in the center.

Once baked, remove from oven and dot the hot filling with a teaspoon more honey if you like extra gloss. Allow the galette to cool on the pan for 15–20 minutes so the filling sets slightly (this is the 'slow fade' moment where juices mellow).
