Preparation

Chill components

Remove cheeses from refrigeration 20–30 minutes before serving so softer cheeses reach room temperature and develop flavor. Keep meats chilled until assembly if serving immediately.

Prepare crostini and crackers

If using pretzel crostini not pre-toasted, place 24 pieces on a baking sheet and toast in a 350°F (175°C) oven for 5–7 minutes until crisp. Allow to cool on a rack.

Slice apple

Core and thinly slice 1 apple into 1/8-inch slices. To prevent browning, toss slices lightly with 1 teaspoon honey (from the honey portion) or arrange on the board shortly before serving.

Cheese & Meat Prep

Arrange cheeses

Place the soft cheese wheel (8 oz) on the board first. If desired, score the rind or cut a small wedge to invite guests. Arrange the aged cheddar (6 oz) slices fanned out near one edge and place the semi-soft gouda (6 oz) cubed next to it for easy picking.

Fold and arrange meats

For visual variety, form prosciutto slices into loose rosettes by folding or rolling each piece (6 oz total) and place them near the soft cheese. Fan salami slices (6 oz) in an overlapping line. Slice the cured chorizo (4 oz) into 1/8-inch rounds and stack or scatter in a small pile.

Board Assembly

Choose a wooden or slate board large enough for all components. Place cheeses and a small bowl for olives and mustards spaced across the board to anchor composition.

Place meats adjacent to cheeses so guests can combine flavors easily. Keep cured chorizo near the semi-firm cheese and prosciutto near the soft cheese for balance.

Fill a small dish with berry jam (6 tbs) and place near crackers and soft cheese; place another small dish with whole-grain mustard (2 tbs) near the meats. Put marinated olives (3 tbs) and cornichons (12 pieces) in separate small bowls and set them on the board.

Arrange apple slices (from Preparation) in a fan or stacked group. Scatter fresh berries (1 cup) in small clusters around the board. Tuck handfuls of mixed toasted nuts (1 cup) into empty spaces to add texture.

Place dark chocolate squares (6 pieces) near the berries and jam to encourage sweet pairings. Add pretzel crostini/crackers (24 pieces) in small stacks or leaning against bowls for easy grabbing.

Drizzle remaining honey (reserve approximately 1 tbs if previously used) lightly over the nuts or serve in a tiny spoon for guests who want to pair it with cheese. Garnish with fresh herb sprigs (2 sprigs) for aroma and visual contrast.

Serving & Tips

Provide small cheese knives for each cheese, toothpicks or cocktail picks for pickles and olives, and small spoons for jam and honey. Label cheeses and any allergens if serving to a group.

Replenish high-use items (crackers, crostini, apple slices) as needed. If the board sits out for more than 2 hours at room temperature, refrigerate perishable cheeses and meats and replace at serving if required by food-safety guidelines.
