Honey Syrup
Make the honey syrup
Combine 2 tablespoons honey and 2 tablespoons hot water in a small jar or bowl. Stir or whisk until the honey fully dissolves and the mixture is smooth and pourable. Let cool to room temperature before using. (Yields about 1.25–1.5 oz syrup; scale proportionally if you need more.)
Cocktail Preparation
Chill glass
Place a coupe or chilled rocks glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to chill it.
Measure ingredients
Measure 2 oz gin, 0.75 oz fresh lemon juice (about half a lemon), and 0.75 oz cooled honey syrup into a cocktail shaker.
Add ice and shake
Add 6 ice cubes to the shaker. Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker becomes very cold and slightly frosty. This chills, dilutes, and aerates the drink for a silky texture.
Double strain and serve
Discard the ice or water from the chilled glass. Using a cocktail strainer and a fine mesh strainer (or just the shaker’s built-in strainer if a fine mesh isn’t available), strain the cocktail into the chilled coupe or rocks glass to remove small ice shards and any pulp.
