Preparation

    Chill and prep

    Place the caviar tin in the coldest part of the refrigerator at least 30 minutes before service. Arrange 2 cups of crushed or shaved ice in a chilled serving bowl or tray to create a bed for the caviar tin so it remains cold during service.

    If using hard‑boiled eggs, cook eggs until firm (9–12 minutes boiling), cool in an ice bath, peel, then separate yolks and whites. Finely grate the yolks and dice the whites. Keep covered and chilled until serving.

    Warm blini briefly on a skillet over low heat or in a 300°F (150°C) oven for 3–5 minutes. Keep wrapped in a towel to stay warm. Lightly toast brioche points until golden and cool to room temperature. Arrange potato chips in a covered container so they remain crisp.

Sauces & Condiments

    Compound butter (optional)

    Soften 2 tbsp unsalted butter at room temperature until pliable. For a subtle lacquer, whip smooth and place a small quenelle on each warm blini or brioche point just before adding other components. Keep refrigerated until service and remove 5 minutes before plating to soften slightly.

    Crème fraîche garnish

    Combine 1 cup crème fraîche with 2 tsp finely chopped chives and 1 tsp freshly cracked black pepper in a small chilled bowl. Stir gently and taste; adjust seasoning with a small pinch of flaky sea salt if needed. Transfer to a serving bowl and chill until plating.

    Onion, egg and caper accoutrements

    Place 2 tbsp finely chopped red onion or shallot, 2 tbsp grated hard‑boiled yolk, 2 tbsp diced hard‑boiled white and 2 tbsp drained capers into separate small serving dishes or compartments so guests can assemble bites to taste.

Plating & Service

    Place the bed of ice on your service platter and set the chilled caviar tin (or transfer caviar to a chilled non‑metal bowl) on top of the ice. Keep the tin lid nearby, on the ice, if desired.

    Arrange the small bowls of crème fraîche, chopped chives, onion/shallot, egg yolk, egg white, capers, lemon wedges, toasted brioche points, warm blini and potato chips around the caviar on the platter so guests can reach everything easily.

    Provide a small mother‑of‑pearl or non‑metal spoon for the caviar. Do not use metal spoons (they can impart a metallic taste). Place spoons beside the caviar and small spoons for the condiments.

    To serve a bite: use a small spoon to place a small dab (about 1/2 tsp) of crème fraîche on a blini or toast, add a small amount (1/4–1/2 tsp) of caviar, and top with a pinch of chopped chive, a tiny piece of egg white and a few grains of grated yolk or a caper. Squeeze a whisper of lemon if desired. Alternatively, place caviar on a crisp potato chip with a dot of crème fraîche for a contrasting texture.

    Advise guests to taste the caviar on its own first (about half a teaspoon) to appreciate the flavor and texture before trying combinations. Replenish ice as needed to keep the tin chilled during service. Serve immediately and consume within 30–60 minutes of opening for best quality.
