Prepare Base

    Measure and combine

    Add 1 oz cognac, 0.5 oz fresh lemon juice, and 0.5 oz simple syrup into a cocktail shaker.

    Add ice

    Fill the shaker about two-thirds full with ice (approximately 1 cup) to properly chill and dilute the cocktail.

    Shake

    Secure the shaker lid and shake vigorously for 10–12 seconds, until the outside of the shaker is very cold and slightly frosted.

Assemble and Serve

    Strain

    Double-strain the chilled mixture into a chilled flute or coupe using a fine mesh strainer to remove ice shards and pulp.

    Top with sparkling wine

    Carefully top with about 3 oz chilled Champagne (or dry sparkling wine). Pour gently to preserve bubbles and avoid overflow.

    Garnish

    Express a lemon twist over the drink (pinch to release oils), run it around the rim if desired, and drop the twist into the glass as a garnish.
