Prepare chops
Remove lamb chops from the refrigerator about 20–30 minutes before cooking to bring them to near room temperature. Pat them dry on both sides with paper towels; drying ensures a good sear.
Make marinade
In a bowl, combine 3 tbs olive oil, 1 tbs lemon juice, minced garlic, chopped rosemary, thyme, Dijon mustard, 1.5 tsp kosher salt and 1 tsp freshly ground black pepper. Whisk until emulsified.
Marinate chops
Place chops in a shallow dish or a resealable plastic bag. Pour marinade over the chops and rub to coat both sides thoroughly. Arrange chops in a single layer. Marinate at room temperature for 20–30 minutes or refrigerate for up to 4 hours. If refrigerating, bring back to room temperature for 30 minutes before cooking.
Sear and cook
Add the lamb chops to the hot skillet in a single layer without crowding (cook in batches if necessary). Sear chops for 2.5–3 minutes on the first side without moving them, until a deep brown crust forms. Flip and cook for 2–3 minutes for medium-rare (internal temperature 130–135°F / 54–57°C). For medium, cook 3–4 minutes on the second side (135–145°F / 57–63°C). Adjust times for chop thickness—these times assume 1 to 1.25-inch thick chops.
Rest
Transfer cooked chops to a warm plate and loosely tent with foil. Rest for 5–7 minutes to allow juices to redistribute; internal temperature will rise a few degrees.
Pan Sauce (optional)
Sauté shallot
After removing the chops, reduce heat to medium and add 1 tbs unsalted butter to the still-hot pan. Add minced shallot and the rosemary sprig and sauté for about 1 minute until softened and fragrant but not browned.
Deglaze
Pour in 1 dl (about 3.5 fl oz) of dry wine and use a wooden spoon to scrape up the browned bits from the pan (fond). Allow the wine to reduce by half, 1–2 minutes.
Finish sauce
Add 1/2 cup stock and simmer for 2–3 minutes until slightly thickened. Remove the rosemary sprig. Swirl in the reserved 1 tbs butter off heat to enrich and gloss the sauce. Taste and season with salt and pepper to taste.
Serve
Spoon warm sauce over rested lamb chops or serve on the side.
To Serve
Arrange lamb chops on a warmed serving platter. Sprinkle with chopped parsley and serve with lemon wedges alongside for squeezing over the meat.
