Method
Prepare and Marinate
Clean and score chicken
Pat the chicken pieces dry with paper towels. Make 2–3 shallow diagonal slashes in each piece to allow marinade to penetrate. Sprinkle 2 tsp salt over the chicken and rub it into the slashes and cavity; set aside for 10 minutes.
Make the spice paste
In a blender or food processor combine yogurt, white vinegar, garlic cloves, chopped onion, green chilies, cilantro, ginger, lemon juice, ground coriander, ground cumin, turmeric, red chili powder, black pepper, 1 tsp salt, and whole spices (black cardamom, green cardamom, cloves) if using. Add 2–3 tbsp water if needed and blitz to a smooth paste.
Marinate
Coat each chicken piece thoroughly with the spice paste, rubbing some inside the slashes. Place the chicken in a bowl or zip-top bag, cover, and refrigerate for at least 2 hours, preferably overnight for best flavor.
Poach and Reduce (traditional Charga method)
Initial sear (optional but recommended)
Heat 2 tbsp oil in a large, heavy skillet or Dutch oven over medium-high heat. Working in batches if necessary, add chicken pieces skin-side down and sear until golden brown, 3–4 minutes per side. Remove and set aside. Searing builds flavor but can be skipped if you prefer only poaching.
Poach
Return all chicken pieces to the pot. Pour 500 ml water into the pan — just enough to come partway up the pieces (you may use less if pan is shallow). Bring to a gentle simmer, cover with a tight-fitting lid, reduce heat to low, and poach gently for 20–25 minutes until chicken is cooked through (internal temperature 74°C / 165°F) and tender.
Reduce and confit
Remove the lid and increase heat to medium-high to reduce the remaining liquid until it becomes a thick glossy glaze that coats the chicken (about 6–10 minutes). As liquid reduces, spoon hot oil and paste over the pieces so they become richly coated. The goal is a nearly dry, highly flavored surface—this creates the characteristic Charga texture.
Fry and Finish
Deep-crisp the chicken (traditional Charga crisp)
In a deep skillet or wok, heat 0.5 cup vegetable oil to 175°C (350°F). Fry the reduced chicken pieces in batches until the exterior is deeply browned and crisp, 3–5 minutes per batch. Drain briefly on a wire rack or paper towels. (If you prefer a shallower finish, you can instead shallow-fry in 2–3 tbsp oil until crisp.)
Final tempering
Wipe the wok or use a clean pan; melt 2 tbsp ghee or butter over medium heat. Add the thinly sliced garlic and fry until golden and crisp, about 1–1.5 minutes. Remove the garlic with a slotted spoon and reserve for garnish. Add 1 tsp dried fenugreek leaves to the hot ghee, stir 10 seconds to release aroma, then immediately pour this flavored ghee over the fried chicken pieces. Toss gently to coat.
