Prepare Patties

Form patties

Place ground beef in a large bowl. Add kosher salt, black pepper and Worcestershire sauce. Gently mix with your hands until combined — do not overwork. Divide into 4 equal portions (about 4 oz each). Form into round patties about 3/4 inch thick and make a slight dimple in the center of each patty with your thumb to prevent doming while cooking.

Press a light coating of vegetable oil on both sides of each patty to help prevent sticking to the grill or skillet.

Caramelized Onions

Peel and halved the yellow onion, then slice into thin half-moons. Heat a large skillet over medium heat and add the butter. When the butter is melted and foamy, add the sliced onion and a pinch of salt. Cook, stirring occasionally, for 12–15 minutes until the onions are deeply golden and soft.

Stir in the brown sugar and apple cider vinegar and cook for an additional 1–2 minutes to glaze the onions. Remove from heat and set aside.

Grill / Cook Patties

Preheat a gas grill to medium-high (about 400°F / 200°C) or heat a cast-iron skillet / griddle over medium-high heat. If using grill grates, oil them lightly.

Place the patties on the hot grill or skillet. Cook without moving for 3–4 minutes to develop a crust.

Flip the patties and brush the cooked side with about half of the bbq sauce (approximately 1 tbs per patty). Cook another 3–4 minutes for medium doneness. During the last 1 minute of cooking, brush the top side with remaining bbq sauce and place a cheddar slice on each patty. Close grill lid or cover skillet briefly to melt the cheese.

Use an instant-read thermometer if desired: medium is about 140–145°F (60–63°C). Remove patties from heat and rest for 2 minutes.

Toast Buns & Assemble

Split the brioche buns and spread about 1/2 tbs butter on each cut side. Toast buttered sides on the grill or in a skillet for 1–2 minutes until golden and crisp.

Spread 1 tbs mayonnaise on the bottom half of each toasted bun. Place a lettuce leaf on the mayo, then the burger patty with melted cheddar. Top each patty with about 2 tbs of caramelized onions, 2 pickle slices and 2–3 tomato slices. Place the top bun and serve immediately.
