Method
Whipped Feta
Prepare Feta
Crumble the feta into chunks. If feta is in brine, drain and pat dry with paper towel to remove excess moisture.
Blend
In a food processor or high-speed blender, add the crumbled feta, cream cheese, Greek yogurt, lemon juice, lemon zest, minced garlic, and black pepper. Pulse to combine until a coarse paste forms.
Emulsify
With the processor running, slowly drizzle in 2 tablespoons extra-virgin olive oil until the mixture becomes smooth and light — about 30–45 seconds. If the mixture is too thick for spreading, add up to 1 tablespoon hot water (a teaspoon at a time) and pulse until you reach a spreadable, whipped texture.
Taste and Adjust
Taste and adjust seasoning: add a pinch of salt only if needed (feta is usually salty) and more lemon or pepper to brighten. Transfer whipped feta to a shallow serving bowl or rimmed plate and smooth the top with a spatula, leaving room in the center for the muhammara.
Smoky Morita Chili & Pistachio Muhammara
Rehydrate Morita Chilies
Bring 3/4 cup water to a simmer in a small saucepan. Remove from heat, add the morita chilies and soak for 10 minutes until softened. Reserve 2 tablespoons of the soaking liquid and discard the rest (or save for another use).
Toast Pistachios
While chilies soak, heat a small skillet over medium heat. Add the shelled pistachios and toast, stirring frequently, until fragrant and slightly golden, about 3–4 minutes. Remove from heat and let cool slightly.
Combine Ingredients
In a food processor, add the drained roasted red peppers, rehydrated morita chilies (stemmed and roughly chopped), toasted pistachios (reserve a tablespoon for garnish), bread crumbs, smoked paprika, cumin, pomegranate molasses, sherry vinegar, 2 tablespoons olive oil, salt, and black pepper.
Process to Muhammara Texture
Pulse the mixture until it comes together but still has texture — a coarse, slightly chunky paste. Scrape down the sides as needed. If the mixture is too thick, add the reserved chili soaking liquid or up to 2 tablespoons water, 1 tablespoon at a time, until you reach a spreadable but substantial muhammara consistency.
Adjust Flavors
Taste and adjust for balance — more pomegranate molasses for sweetness/tang, more vinegar for brightness, or a pinch more salt. Stir in the remaining 1 tablespoon olive oil by hand for shine and silkiness.
Finish & Serve
Assemble
Spoon the smoky morita chili & pistachio muhammara into the center of the smoothed whipped feta, creating a shallow well or a neat pile (about 1/2 cup muhammara).
Garnish
Scatter pomegranate seeds over the muhammara and around the whipped feta. Sprinkle the toasted chopped pistachios and torn mint leaves over the top. Drizzle 1 tablespoon good-quality extra-virgin olive oil over everything and finish with a light pinch of flaky sea salt.
Serve
Serve immediately with warm pita, toasted flatbread, or crisp vegetables for dipping. Leftovers can be refrigerated in an airtight container for up to 3 days; bring to room temperature before serving.
