Prepare mushrooms

Preheat the oven to 400°F (200°C). Wipe mushrooms clean with a damp paper towel. Remove and reserve stems by gently twisting or cutting; set caps gill-side up in a shallow baking dish large enough to hold them snugly.

Chop stems

Finely chop the reserved mushroom stems and set aside.

Sauté aromatics

In a medium skillet over medium heat, add 1 tbs olive oil and 1 tbs unsalted butter. When the butter melts and becomes foamy, add the minced shallot and sauté 1–2 minutes until translucent. Add the minced garlic and chopped mushroom stems and cook 3–4 minutes until the mixture releases moisture and most of the liquid evaporates.

Finish filling

Stir in 3 tbs chopped parsley, 1 tbs grated Parmesan, 1 tsp lemon juice, 1 tsp salt, and 1/2 tsp freshly ground black pepper. Cook 30 seconds to combine, then remove from heat and let cool 2–3 minutes. Add remaining 2 tbs unsalted butter, cut into small pieces, and stir to incorporate for a glossy, slightly rich filling. Taste and adjust seasoning.

Fill mushroom caps

Spoon a generous amount of the warm filling into each mushroom cap, pressing lightly so the filling sits just above the rim of the cap. Arrange filled caps back in the baking dish gill-side up.

Add liquid for roasting: Drizzle the 2 tbs white wine or vegetable stock around (not over) the caps in the baking dish to create steam while roasting. Tuck thyme sprigs between caps if using.

Calabrian Chili Breadcrumb Topping

Prepare topping

In a small bowl, combine 3/4 cup fresh breadcrumbs, 1 tsp Calabrian chile paste, 1 tbs olive oil, 2 tbs grated Parmesan, 1/2 tsp lemon zest, 1/4 tsp salt, and 1/4 tsp red pepper flakes (if using). Mix until the crumbs are evenly coated and hold together slightly. Adjust chile paste to taste for more or less heat.

Top mushrooms

Distribute the chili-parmesan breadcrumb mixture evenly over each filled mushroom, pressing lightly so it adheres to the filling.

Bake

Bake in the preheated 400°F (200°C) oven for 12–15 minutes, until the mushrooms are tender, the filling is hot, and the breadcrumb topping is golden and crisp. If the tops brown too quickly, cover loosely with foil for the remaining time.

Finish under broiler (optional)

For extra crunchy topping, place under a hot broiler 1–2 minutes, watching constantly to avoid burning.

Serving & Finish

Remove the baking dish from the oven. Spoon any pan juices around the mushrooms over the top. Garnish with the remaining 1 tbs chopped parsley and an extra dusting of grated Parmesan if desired.

Serve warm as an appetizer or small plate. Each mushroom is best enjoyed immediately; leftovers can be chilled and gently reheated in a 350°F (175°C) oven for 8–10 minutes.
