Prepare and salt

Trim the eggplants: remove stems and any blemished skin. Using a sharp knife, make two or three shallow lengthwise slashes in the flesh to help cook evenly. Lightly rub the eggplants with 1 tablespoon olive oil and sprinkle 1 tablespoon kosher salt over the surface; let sit 20 minutes to draw out bitterness, then pat dry with paper towels.

Char the eggplants

Heat a heavy-bottomed skillet or cast-iron pan over high heat until smoking. Place eggplants directly in the pan and cook, turning every 4–5 minutes, until skin is blackened and flesh collapses and becomes very tender, about 15–20 minutes total. You can also roast under a broiler or over a gas flame (rotating) for similar charring.

Steam and cool

Transfer charred eggplants to a bowl and cover tightly with plastic wrap or a lid for 10 minutes to steam — this loosens the flesh. When cool enough to handle, slice the eggplants open and scoop out the flesh into a colander to drain for 5 minutes, then transfer to a bowl and gently rough-chop or shred with two forks to a coarse texture.

Finish with oil

Fold in the remaining 2 tablespoons olive oil into the chopped eggplant and season with a little pepper to taste. Adjust salt if necessary. Keep warm or bring to room temperature before serving.

Valeppo (spiced tomato-eggplant gremolata)

Prepare base ingredients

While eggplant chars, finely dice the tomato (remove seeds if very watery), finely mince the shallot and garlic. Place tomato, shallot, and garlic in a small bowl.

Combine spices and oil

To the tomato mixture add 1 tablespoon olive oil, 1 tablespoon lemon juice, 1 teaspoon smoked paprika, 1 teaspoon red pepper flakes, 1 teaspoon kosher salt, and 1 teaspoon black pepper. Stir well and taste; adjust acidity or salt as needed. Let the mixture sit 5–10 minutes so flavors meld.

Fold into eggplant

Fold the spiced tomato-shallot mixture into the warm chopped eggplant until evenly combined. The valeppo should be moist but not soupy; if too thick, add a drizzle (up to 1 tablespoon) of olive oil or a squeeze of lemon juice.

Prepare mint garnish

Stack the mint leaves, roll them into a tight cylinder (chiffonade) and thinly slice crosswise to make fine ribbons. Combine the mint ribbons with 1 tablespoon extra-virgin olive oil, 1 teaspoon lemon zest and 1/2 teaspoon sea salt flakes.

Assemble and serve

Spoon the valeppo-tossed eggplant onto a serving platter. Scatter the mint mixture over the top so the herb and lemon brightness shines through the smoky eggplant. Drizzle a final teaspoon of olive oil if desired. Serve warm or at room temperature with crusty bread, pita, or as a mezze component.
