Preparation of Shrimp

Cure the Shrimp

In a glass or ceramic bowl, combine the shrimp with lime juice. Ensure that the shrimp are fully submerged. Cover with plastic wrap and refrigerate for 30 minutes to 1 hour until the shrimp turn opaque and are fully cured.

Combine Ingredients

In a large mixing bowl, combine the diced mango, finely chopped shallot, serrano chili pepper, diced tomato, chopped green onion, and chopped cilantro.

Combine Cured Shrimp with Vegetables

Once the shrimp are cured, drain the excess lime juice and add the shrimp to the bowl with the other ingredients. Gently mix to combine.

Season the Ceviche

Add salt and black pepper to taste. Mix again gently to incorporate the seasonings evenly throughout the ceviche.

Serving

Spoon the ceviche into serving bowls and garnish with additional cilantro if desired. Serve immediately with tortilla chips or on its own.
