Marinate the Lamb

In a bowl, combine minced garlic, chopped rosemary, olive oil, lemon juice, salt, and black pepper. Mix well to create the marinade. Rub the marinade thoroughly over the lamb shoulder, covering it completely. Cover the lamb and refrigerate for at least 2 hours, preferably overnight.

Prepare the Vegetables

Peel and chop the carrots and potatoes into even-sized pieces. Cut the onion into wedges. Set aside.

Preheat the Oven

Preheat your oven to 350°F (175°C).

Sear the Lamb

In a large oven-safe pot or Dutch oven, heat a tablespoon of olive oil over medium-high heat. Once hot, add the marinated lamb shoulder and sear on all sides until browned (about 4 minutes per side).

Add Vegetables

Once the lamb is browned, add the chopped carrots, potatoes, and onion around the lamb in the pot.

Roast in Oven

Cover the pot with a lid and transfer it to the preheated oven. Roast for about 2 hours, or until the lamb is tender and the internal temperature reaches at least 145°F (63°C).

Rest and Serve

Remove the pot from the oven and let the lamb rest for 15 minutes before slicing. Serve with the roasted vegetables.
