1. Prepare the ingredients
Slice the bolillo rolls in half horizontally. Mash the avocado and slice the tomato. Rinse and chop the lettuce.
2. Assemble the Torta
Spread a layer of refried beans on the bottom half of each bolillo roll. Layer with grilled chicken or pork, followed by sliced avocado, tomato, and lettuce.
3. Add toppings
Sprinkle pickled jalapeños and cheese on top. Drizzle with sour cream and hot sauce to taste.
4. Close and serve
Place the top half of the bolillo roll on the assembled ingredients. Press down gently, cut in half if desired, and serve immediately.
