Gather & measure

Measure and separate all proteins and toppings. Shred cheese, dice tomato, rinse corn if using canned, and set tortillas aside.

Preheat a large nonstick skillet over medium heat. Have spatula and measuring tools ready.

Cook Proteins

Brown proteins together

Add 1 tablespoon vegetable oil to the preheated skillet. Add ground beef, ground chicken, and ground pork to the pan in a single layer. Use a spatula to break meat into small pieces. Cook, stirring occasionally, until no pink remains and meat is lightly browned, about 6–8 minutes.

Season

Drain any excess fat if there is more than 1 tablespoon in the pan. Return pan to medium heat, sprinkle 1 tablespoon mild taco seasoning over the cooked meat, add 3 tablespoons water, and stir to combine. Allow mixture to simmer gently 2–3 minutes until slightly thickened and seasoning is evenly distributed. Taste and add 1/4 teaspoon salt and 1/8 teaspoon black pepper if desired.

Melt 1 tablespoon butter in a clean skillet over low heat or use a microwave. For skillet: warm each 6-inch tortilla 20–30 seconds per side until pliable and lightly golden. For microwave: stack tortillas, wrap in a damp paper towel, and heat 20–30 seconds. Keep warm by wrapping in a clean towel.

Assemble tacos

Place a warmed tortilla flat. Spoon about 2–3 tablespoons of the mixed protein onto each tortilla (this recipe yields six small tacos). Sprinkle about 2 tablespoons shredded cheddar cheese over the meat so it melts slightly. Add desired toppings: about 1 tablespoon shredded lettuce, 1 tablespoon diced tomato, and 1 tablespoon corn if using. Finish with 1 teaspoon mild salsa and 1 teaspoon sour cream per taco (or serve salsa and sour cream on the side for dipping).

If serving with lime, offer a wedge per taco for squeezing. Serve immediately while warm.

Notes & Kid-Friendly Tips

For very young children, finely chop or mash tomatoes and lettuce, or omit them. Adjust seasoning to be milder by reducing taco seasoning to 1/2 tablespoon. Leftover cooked meat stores in an airtight container in the refrigerator up to 3 days.
