Method
Prep Chicken
Trim and dry
Pat chicken thighs dry with paper towels. Trim excess fat or loose skin. This helps the skin render and the smoke adhere.
Season both sides of the thighs evenly with 1 1/2 tablespoons kosher salt, 1 teaspoon cracked black pepper, and 1 teaspoon smoked paprika. Rub 2 tablespoons olive oil over the skin to help crisping and smoke adhesion.
Prepare Wood Chips
Place approximately 1 cup wood chips in a bowl and cover with 1 cup water; soak at least 30 minutes while you prepare the sauce and chicken. Drain before using and wrap in foil or place in smoker box per your grill instructions.
Make Chipotle-Garlic Butter Sauce
Melt butter
In a small saucepan over low heat, melt 6 tablespoons unsalted butter gently until fully liquid but not browned.
Add aromatics and chipotle
Add 5 minced garlic cloves and cook over low heat 30–45 seconds, stirring, until fragrant. Stir in 2 finely chopped chipotle peppers and 2 tablespoons adobo sauce and cook 30–45 seconds more to bloom the chilies.
Season and balance
Whisk in 2 tablespoons lime juice, 1 tablespoon honey, 1 tablespoon apple cider vinegar, 1/2 teaspoon ground cumin, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Simmer on very low heat for 1–2 minutes to meld flavors. Remove from heat and stir in 2 tablespoons chopped fresh cilantro.
Set aside 1/4 cup of the warm sauce for basting during the last stage of cook; reserve the remaining sauce to serve with the chicken (keep warm).
Smoke/Grill the Chicken
Prepare your grill for indirect medium heat (target 350°F / 175°C). If using a smoker, preheat to 250–275°F (120–135°C). Add drained wood chips to smoker box or foil pouch placed over coals or heat source.
Place thighs skin side up on the cool side of the grill (indirect heat). Close lid and smoke/grill for 25–35 minutes if at 350°F, or 60–75 minutes if smoking low at 250–275°F, until internal temperature at the thickest part reaches 155–160°F (68–71°C). Rotate pans/positions once halfway for even smoke exposure.
During the last 8–10 minutes of cooking, brush the chicken liberally with the reserved warm chipotle-garlic butter every 2–3 minutes to build a glossy, flavored glaze and encourage caramelization. Move pieces briefly over direct heat, skin side down, for 1–2 minutes if you want crispier skin—watch closely to prevent flare-ups.
Finish and Serve
Brush the rested thighs with additional reserved chipotle-garlic butter or the remaining warm sauce. Sprinkle with extra chopped cilantro and serve with lime wedges on the side for squeezing.
Serve remaining sauce on the side for dipping. Pair with rice, grilled vegetables, or a simple salad.
