Cook aromatics
Heat a large skillet over medium-high heat. Add the vegetable oil and chopped onion. Cook, stirring occasionally, until the onion is softened and translucent, about 3–4 minutes. Add the minced garlic and cook for 30 seconds until fragrant.

Brown the beef
Add the ground beef to the skillet. Break it up with a spatula and cook until no longer pink, about 5–6 minutes. Drain any excess fat if desired, leaving a small amount for flavor.

Season and finish
Push the beef to the side and stir in the chili powder, cumin, smoked paprika, tomato paste, salt, and black pepper. Mix thoroughly to coat the meat. Pour in the broth and stir in the drained black beans and corn. Simmer for 2–3 minutes until slightly thickened and heated through. Taste and adjust salt or spices as needed. Remove from heat.

Preheat oven
Preheat the oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil for easy cleanup.

Layer chips
Arrange half of the tortilla chips in an even layer on the prepared baking sheet, leaving small gaps so layers will nest slightly.

Add beef and cheese
Spoon half of the warm beef-and-bean mixture over the chips, distributing evenly. Sprinkle one-third of the shredded cheddar and Monterey Jack cheeses over the top. Add the remaining chips in another even layer, then spoon the rest of the beef mixture over them. Finish by sprinkling the remaining cheeses evenly.

Add jalapeños and bake
Scatter pickled jalapeño slices over the top (reserve some for serving if you like extra heat). Bake in the preheated oven for 8–10 minutes, or until the cheese is melted and bubbly and edges of some chips begin to brown.

Top and garnish
Remove the nachos from the oven. Dollop sour cream and spoon salsa (or pico de gallo) across the top in several places. Sprinkle diced tomatoes and extra jalapeño slices if using. Finish with chopped fresh cilantro and squeeze lime wedges over the nachos to brighten flavors.

Serve
Serve immediately while hot and the cheese is gooey. Provide extra sour cream, salsa, and lime wedges at the table.
