Cocktail

Optional: Smoked/Rim variations

Method

Prep

1

Prepare glass

If desired, run a lime wedge around the rim of a chilled rocks or coupe glass. Combine the salt (and Tajín if using) on a small plate and dip the rim into the mixture to coat. Set glass aside in the freezer or refrigerator to chill while you build the cocktail.

2

Juice citrus

Juice fresh limes and blood orange until you have the required amounts. Strain blood orange juice if pulp is undesirable.

Build & Shake

3

Combine ingredients in shaker

Add 2 oz reposado tequila, 0.75 oz fresh lime juice, 0.75 oz fresh blood orange juice, 0.5 oz orange liqueur, 0.5 oz agave syrup and 2 dashes dry orange bitters into a cocktail shaker.

4

Add ice and shake

Fill the shaker about two-thirds full with ice and shake vigorously for 12–15 seconds, until the shaker is very cold and the exterior is frosty. This chills and lightly dilutes the drink.

Strain & Garnish

5

Double strain

Double-strain the cocktail into the chilled, salt-rimmed rocks or coupe glass over one large ice cube (rocks) or without ice (coupe), using a Hawthorne and fine mesh strainer to remove small ice chips and any pulp.

6

Garnish

Express the orange zest over the drink to release oils and rub the rim with the peel if you like extra aroma. Float or place a dehydrated orange wheel or a fresh blood orange slice on the rim as garnish.

7

Optional smoked finish

For a smoky element, briefly capture smoke in the glass before pouring, or briefly torch a piece of orange peel to flame the oils and drop it into the drink.
