Method
Taco Filling (beef)
Cook aromatics
In a medium skillet over medium heat, add 1 teaspoon vegetable oil. When hot, add 1/4 cup finely chopped onion and 1 minced garlic clove. Sauté until softened and translucent, about 2 minutes.
Brown beef
Add 1/2 lb ground beef to the skillet. Break it up with a spatula and cook until no longer pink, about 4–5 minutes.
Season beef
Stir in 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon paprika, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add 2 tablespoons water, reduce heat to low, and simmer 2–3 minutes until the mixture is slightly saucy and well combined. Taste and adjust seasoning.
Remove from heat and keep warm while you prepare rice and beans.
Taco Assembly & Toppings
Assemble tacos
Divide the cooked beef evenly between the 2 warmed tortillas (about half the beef per taco). Top each with shredded lettuce, diced tomato, 2 tablespoons shredded cheese (total 1/4 cup), 1 tablespoon sour cream (per taco) and 1 tablespoon salsa (per taco). Finish with a squeeze of lime and optional cilantro or pickled jalapeños.
Spanish Rice
Toast rice
In a small saucepan, heat 1 teaspoon vegetable oil over medium heat. Add 1/2 cup uncooked long-grain white rice and sauté, stirring, until rice is lightly toasted and opaque, about 2–3 minutes.
Simmer
Add 2 tablespoons finely chopped onion, 1/2 clove minced garlic, 3 tablespoons tomato sauce, 1 cup chicken or vegetable broth, 1/8 teaspoon ground cumin and 1/4 teaspoon salt. Stir, bring to a gentle boil, then reduce heat to low, cover, and simmer for 15–18 minutes or until liquid is absorbed and rice is tender.
Fluff
Remove from heat and let sit covered 5 minutes. Fluff with a fork before serving.
Refried Beans
Sauté aromatics
In a small skillet over medium heat, warm 1 teaspoon lard or vegetable oil. Add 1 tablespoon finely chopped onion and 1/2 clove minced garlic and sauté until softened, about 1–2 minutes.
Add beans and mash
Stir in 1/2 can pinto beans (including some of the liquid). Using a potato masher or back of a spoon, mash to your desired texture (smooth or slightly chunky). If too thick, add 1–2 tablespoons water or reserved bean liquid to loosen.
Season
Season with 1/4 teaspoon salt, 1/8 teaspoon black pepper and 1/2 teaspoon lime juice (optional). Cook 1–2 minutes more until heated through. Keep warm until serving.
Plating
On a plate, place the 2 assembled tacos. Spoon the Spanish rice (about 1/2 cup) alongside and a generous scoop of refried beans (about 1/3 cup). Garnish beans and rice with chopped cilantro and add lime wedges on the side.
