Sauté aromatics

Heat a medium skillet over medium heat. Add vegetable oil or butter and let it warm until shimmering. Add the finely diced onion and sauté 4–5 minutes until softened and translucent. Add the minced garlic and cook 30–45 seconds until fragrant, stirring so it doesn't brown.

Season and combine

Stir in ground cumin, chili powder, salt, and black pepper. Cook 30 seconds to bloom the spices. Reduce heat to low and add the refried beans to the skillet. Stir thoroughly to combine with the aromatics. If the beans are very thick, add 1–2 tablespoons water or broth to loosen.

Finish bean base

Simmer the bean mixture on low for 3–5 minutes, stirring occasionally, until heated through and smooth. Stir in lime juice, if using, then taste and adjust salt or spices as desired. Keep warm on the lowest heat while you prepare the cheese layer.

Combine cheeses

In a small saucepan or a double boiler over low heat, combine the diced processed cheese (or cream cheese), shredded cheddar, and milk. Warm gently, stirring frequently until the cheeses melt and form a smooth sauce. If using a microwave, heat in 30-second increments, stirring between, until smooth.

Adjust texture and flavor

If the cheese mixture is too thick, add additional milk 1 tablespoon at a time to reach a creamy, pourable consistency. Stir in sour cream and chopped pickled jalapeños now if using. Taste and add a pinch of salt if needed.

Combine with beans or layer

Option A — Layered dip: Spoon the warm bean base into a shallow serving bowl and spread evenly. Pour the warm cheese sauce over the beans, spreading to cover. Option B — Mixed dip: Stir the cheese sauce directly into the bean base until fully incorporated for a uniform bean-and-cheese dip. Both approaches keep components warm and are suitable for serving.

Garnish & Serve

Immediately top the finished dip with sliced scallions, diced tomatoes or pico de gallo, chopped cilantro, and crushed tortilla chips as desired. Serve warm with tortilla chips, warm tortillas, or vegetable sticks.

To keep warm for service: transfer the dip to a small slow cooker set to low or an oven-safe dish held at 200°F (95°C) for up to 1–2 hours, stirring occasionally. If the dip thickens, stir in a tablespoon or two of milk or water to loosen before serving.
