Buffanero Chicken Wings
Prep wings
Pat wings very dry with paper towels. If whole, separate into flats and drumettes and remove wing tips. Place wings in a large bowl.
Season and coat
Add kosher salt, black pepper, and baking powder to the wings. Toss thoroughly to coat evenly. The baking powder helps crisp the skin when roasting or frying.
Cook wings (choose method)
Oven method: Preheat oven to 250°F (120°C). Arrange wings on a wire rack set over a rimmed baking sheet and roast for 25 minutes to render fat. Increase oven to 425°F (220°C) and roast until deep golden and crisp, 35–45 more minutes, turning once. Total time ~60–75 minutes. Alternatively, deep-fry: Heat neutral oil to 375°F (190°C). Fry wings in batches 8–10 minutes until crisp and cooked through. Drain on paper towels. For pan-fry: heat 2 tbsp oil in large skillet over medium-high, cook wings, turning, until browned and cooked through (~20–25 minutes).
Buffanero & Habanero Sauce
Prepare peppers safely
Wear gloves or avoid touching face. Mince the habanero finely; remove seeds if you want less heat. You can also finely mince and briefly sauté to mellow the raw bite.
Make sauce
In a small saucepan over medium-low heat, melt the unsalted butter. Add habanero and cook 30–60 seconds to release aroma (do not brown). Stir in buffalo sauce, honey, apple cider vinegar, smoked paprika, garlic powder, lime juice, and 1/2 tsp salt. Simmer gently 2–3 minutes, whisking until fully combined and slightly thickened. Taste and adjust honey or vinegar for balance. Keep warm.
Finish wings in sauce
Place cooked wings in a large wide bowl or into a clean rimmed baking sheet. Pour the warm buffanero-habanero sauce over the wings and toss vigorously until every wing is evenly coated. If you want extra glaze, briefly return coated wings to a 400°F (200°C) oven for 4–6 minutes to caramelize the sauce (optional).
Queso Fresco & Garnish
Assemble
Transfer sauced wings to a serving platter. Immediately sprinkle crumbled queso fresco evenly over the hot wings so it warms slightly and melts a little into the sauce. Scatter chopped cilantro and optional pickled red onions over the top. Serve with lime wedges on the side.
Optional Dipping Sauce
Mix the Greek yogurt or sour cream with lime zest and 1/4 tsp salt. Chill until ready to serve. This cooling dip pairs well with the spicy buffanero wings.
