Prepare the Potatoes
Preheat your oven to 400°F (200°C). Peel and cut the potatoes into uniform chunks. Place them in a large bowl.
Season the Potatoes
Drizzle the chicken fat over the potatoes. Add salt and black pepper. Toss to coat evenly.
Roast the Potatoes
Transfer the potatoes to a baking sheet and spread them in a single layer. Roast in the preheated oven for 30-35 minutes, or until they are golden and crispy, flipping halfway through.
Make the Chimichurri
While the potatoes are roasting, prepare the chimichurri sauce. In a bowl, combine the chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well and set aside.
Serve
Once the potatoes are done, remove them from the oven and let them cool slightly. Serve warm, drizzled with chimichurri sauce.
