Make the Dough

In a large mixing bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Prepare the Filling

In a saucepan over medium heat, combine diced apples, sugar, cinnamon, and lemon juice. Cook until apples are tender, about 5-7 minutes. Set aside to cool.

Assemble the Empanadas

Preheat the oven to 375°F (190°C). On a floured surface, roll out the dough to about 1/8-inch thick. Cut into circles (about 4-5 inches in diameter). Place a spoonful of the apple filling in the center of each circle. Fold over and press the edges to seal. Cut small slits on top for steam to escape.

Bake

Place the empanadas on a baking sheet lined with parchment paper. Brush with a little melted butter and sprinkle with additional sugar. Bake for 20-25 minutes or until golden brown.

Serve warm with a dollop of whipped cream on the side.
