Prepare the Spicy Slaw

In a large bowl, combine shredded cabbage, shredded carrots, and chopped jalapeño. Toss with a splash of vinegar, olive oil, salt, and pepper. Set aside.

Peel and slice the plantains into thick rounds. Heat a skillet with oil over medium heat and fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.
