Method
Prepare oysters and plating
Chill and set a bed of ice
Fill a large shallow serving platter or individual plates with crushed ice to create a stable cold bed for the oysters. Spread the rinsed seaweed over the ice (if using) to create a decorative, aromatic cushion that also helps keep oysters level.
Shuck the oysters
Hold one oyster with a towel-covered hand, cupped flat side up. Insert a short, sturdy oyster knife into the hinge and twist to pop it open. Slide the knife along the top shell to sever muscle and remove the top shell. Run the knife under the oyster to free it from the bottom shell but leave it sitting in its bottom shell to retain liquor. Repeat for all oysters. Discard any oysters with off smells or empty shells. Arrange oysters on the prepared ice/seaweed bed as you go.
Season lightly
Sprinkle a very small pinch of flaky sea salt and a light grind of black pepper onto each oyster to enhance briny flavors without overpowering them.
Make the Galician-style mignonette and optional dressings
Classic shallot mignonette
In a small bowl, combine the finely minced shallot, red wine vinegar, Dijon mustard (if using), and the optional sugar. Stir and let sit for 5–10 minutes to soften the raw edge of the shallot and marry flavors. Whisk in the extra-virgin olive oil to barely emulsify. Taste and adjust: add a touch more vinegar for brightness or a pinch more sugar if too sharp. Fold in the sliced chives.
Optional cider vinegar or pimentón topping
For a Galician twist, combine the cider vinegar with a small pinch of smoked pimentón and stir. This can be spooned sparingly onto some oysters to provide smoky, tangy notes that contrast the clean oyster flavor.
Finish and serve
Spoon a small amount (about 1/2 tsp) of the shallot mignonette onto each oyster just before serving, or serve the mignonette in a small bowl so guests may add to taste. Offer lemon halves, the pimentón vinegar, and lemon-garnished toasted bread slices on the side.
Estimated taste pairing: chilled Albariño or a dry cava complements the briny oysters and bright mignonette.
