Pickled seafood and vegetables

    Prepare cooked seafood

    If your cockles and shrimp are not yet cooked: bring a saucepan of salted water to a boil, add cockles for 1–2 minutes until shells open (discard any that remain closed), remove and chill in an ice bath. Simmer shrimp 1–2 minutes until opaque, then shock in ice water and drain. Pat all seafood dry with paper towels before marinating.

    Drain and ready anchovies and olives

    Drain anchovy fillets from oil and set aside on a plate. Drain olives and pat dry. Halve cornichons lengthwise. Trim stems from guindilla peppers if present and cut longer peppers in half if too big for skewers.

    Make the marinade

    In a small bowl whisk together olive oil, sherry vinegar, lemon juice, minced garlic, smoked paprika, sea salt and black pepper until emulsified. Taste and adjust acidity or salt — the marinade should be bright and slightly tangy to complement the salted anchovies and briny seafood.

    Marinate seafood briefly

    Place the cooked shrimp and chilled cockles in a shallow bowl. Pour about two-thirds of the marinade over them, toss gently to coat, and let sit 10–15 minutes at room temperature (no more than 30 minutes) so flavors meld. Reserve remaining marinade for finishing.

    Assemble the gildas

    Using cocktail picks, thread ingredients in this classic skewered order: one anchovy fillet (folded if long), one olive, one guindilla or pepper piece, one cornichon half, then one chilled cockle or one small shrimp. Alternative order: anchovy + olive + pepper + shrimp + pickle — keep each skewer consistent. Make 12 skewers total.

    Finish and dress

    Arrange skewers on a serving platter. Spoon the reserved marinade over the skewers and brush lightly so each piece gets a sheen. Sprinkle chopped fresh parsley evenly over the skewers and dust very lightly with extra smoked paprika if you like a smoky color. Serve immediately with lemon wedges for squeezing.

Serving and storage

    Serve as an appetizer or pintxo. Gildas are best eaten the day they are assembled. If you must store, keep covered in the refrigerator up to 24 hours; the pickled vegetables and anchovies will intensify in saltiness — bring to cool room temperature before serving.
