Chill servingware and caviar

Place the unopened caviar tin or jar in the refrigerator for at least 30 minutes before serving. If already opened, keep the caviar covered and chilled on crushed ice in a small bowl placed inside a larger bowl. Also chill the small serving spoons (mother‑of‑pearl or plastic preferred) and the blinis for 10–15 minutes prior to plating.

Prepare crème fraîche topping

In a small bowl, gently stir the crème fraîche with the minced shallot and half the snipped chives. Add the lemon zest and one pinch of freshly ground black pepper. Taste and adjust: add a few drops of lemon juice only if desired. Keep chilled until assembly.

Warm or toast carriers

If using blinis or brioche, warm them in a 180°C (350°F) oven for 3–4 minutes until just warmed through. If using melba toast, lightly butter one side of each piece with the unsalted butter and toast in a skillet over medium heat 30–60 seconds until golden. Transfer to a plate and keep warm for immediate serving.

Open and portion caviar

Carefully open the caviar tin. Using a mother‑of‑pearl spoon (or plastic spoon), gently scoop 6–7 grams (about 1 teaspoon) of caviar per serving onto the chilled spoon or directly onto each blini. Avoid metal utensils to prevent a metallic taste. Reserve the tin on crushed ice to keep chilled.

Assemble each canapé

Place a warmed blini or toast on a serving platter. Dot approximately ¼ teaspoon (about 1⁄2 tbs) of the crème fraîche mixture in the center. Gently mound the measured caviar (about 1 tsp / 6–7 g) on top of the crème fraîche. Garnish with a few grains of grated egg yolk or a sprinkle of diced egg white if using, a few microgreens or a tiny dill sprig, and a light dusting of the remaining snipped chives.

Finish and serve

Serve immediately with lemon wedges on the side for guests to add a light squeeze if they choose. Keep the caviar bowl on crushed ice and replenish as needed. Use non‑metallic spoons for serving. Advise guests to eat the canapé in one bite to enjoy the full balance of flavors and textures.

Optional Accoutrements

If using optional components, prepare them before assembly: grate the hard‑boiled yolk finely, dice the white finely, and pat the cucumber very lightly with paper towel to remove excess moisture. Spoon small amounts onto the crème fraîche beneath the caviar as described above—use sparingly so the caviar remains the focus.
