Prepare chicken marinade

Combine 2 tbsp olive oil, 2 tbsp lime juice, 1 tbsp chili powder, 1 tsp cumin, 1/2 tbsp smoked paprika, 1/2 tbsp dried oregano, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, 1/2 tsp black pepper and 1 tbsp chopped chipotle in a large bowl. Add chicken thighs and toss to coat. Marinate refrigerated for at least 30 minutes or up to 4 hours.

Cook chicken

Heat a large skillet or griddle over medium-high heat and add 1 tbsp olive oil. Remove chicken from marinade, letting excess drip off, and sear 4-6 minutes per side until internal temperature reaches 165°F (74°C). Transfer to a cutting board, rest 5 minutes, then slice or shred into bite-sized pieces. Keep warm in a covered pan or chafing tray.

Season and cook ground beef

In a separate large skillet, heat 1 tbsp olive oil over medium-high heat. Add 3 lb ground beef and cook, breaking up with a spoon, until no longer pink (6–8 minutes). Drain excess fat if necessary. Stir in remaining seasoning: 3 tbsp chili powder, 1 tbsp cumin, 1.5 tbsp smoked paprika, 1/2 tbsp oregano, 1 tsp garlic powder, 1 tsp onion powder, 2 tsp salt, 1/2 tsp black pepper and 1 tbsp chopped chipotle plus 2 tbsp lime juice. Add 1/2 cup water, simmer 4–6 minutes until sauce clings to beef. Keep warm for service.

Prepare vegetarian jackfruit

Rinse and drain canned jackfruit, remove core pieces and shred with forks to resemble pulled meat (about 2 cups prepared). In a skillet, heat 1 tbsp olive oil, add shredded jackfruit and 1 tbsp chili powder, 1/2 tsp cumin, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp salt, and 1/2 tbsp chipotle. Add 1/4 cup water and cook 6–8 minutes until flavored and slightly caramelized. Keep warm.

Tortillas & Sides

Warm tortillas just before service. Wrap corn tortillas in a clean kitchen towel and place in a low oven (200°F/95°C) or warming drawer for up to 40 minutes. Keep flour tortillas wrapped separately. Arrange refried beans in a shallow pan and keep warm (stir in a splash of water and 1 tbsp olive oil if too thick). Place shredded cheeses in separate bowls for easy access.

Fresh Toppings

Prepare and arrange toppings on platters or in bowls: shred lettuce, thinly slice red cabbage and radishes, dice tomatoes and red onion, chop cilantro, slice jalapeños, and quarter limes. Keep chilled until service. Label bowls to indicate contents for guests (vegan/vegetarian items noted).

Salsas & Sauces

Transfer pico de gallo, salsa verde, guacamole, and crema to serving bowls. Keep guacamole covered with plastic wrap pressed to the surface to prevent browning. Place hot sauce bottles with the platters. For crema, optionally thin with 1–2 tbsp lime juice and a pinch of salt for drizzling consistency.

Garnishes & Extras

Place pickled red onions, cotija, and extra lime wedges in small bowls for easy grabbing. Sprinkle cotija into a bowl and keep a small spoon for serving. Keep pickled onions chilled.

Assembly & Service

Arrange assembly line or platters for self-serve: one tray each for chicken, beef, jackfruit; warm tortillas nearby; bowls of cheeses and refried beans; fresh toppings and salsas in logical order. Provide tongs/spoons for each item and small serving labels.

Portioning guideline: plan for about 4–5 tacos per person (10 people) — use roughly 3/4 lb cooked meat per protein tray and allow guests to mix. Replenish warm trays as needed and keep cold items on ice if service exceeds 45 minutes.

Safety & holding: maintain hot items at 140°F (60°C) or above in chafing trays. Discard perishable items left out more than 2 hours (1 hour if ambient temperature over 90°F/32°C).
