Prepare cheese blend
In a medium bowl combine shredded cheddar and Monterey Jack. Add salt and black pepper and toss to combine. If using cilantro or jalapeño, stir them into the cheese now so the filling is evenly distributed.
Assemble first quesadilla
Lay one tortilla flat on a plate or cutting board. Sprinkle about 3/4 cup of the cheese mixture evenly over half of the tortilla, leaving a 1/2-inch border. Fold the other half of the tortilla over the cheese to make a half-moon. Repeat for a second tortilla (you can cook two at once if your pan is large enough, otherwise cook them one at a time).
Cook quesadilla
Add 1/2 tablespoon butter to the hot pan and let it melt, swirling to coat. Carefully transfer the folded tortilla into the pan. Cook 2–3 minutes on the first side over medium-low heat until the bottom is golden brown and crisp and the cheese begins to melt. Press gently with a spatula to ensure even contact and melting. Flip the quesadilla and add the remaining 1/2 tablespoon butter to the pan edge so it melts under the second side. Cook an additional 1.5–2 minutes until golden and the cheese is fully melted.
Finish and keep warm
Transfer the cooked quesadilla to a cutting board and tent loosely with foil to keep warm while you cook the remaining quesadillas. Repeat the assembly and cooking process with the remaining tortillas and cheese. If you prefer a more even melt, after flipping you can cover the pan with a lid for 30–45 seconds to trap heat and accelerate melting.
Slice and serve
Use a sharp knife or pizza cutter to slice each quesadilla into 3–4 wedges. Serve immediately with sour cream, salsa, guacamole, and lime wedges as desired.
To serve (optional)
Place sour cream, salsa, and guacamole in small bowls for dipping. Offer lime wedges alongside. If desired, dollop sour cream or guacamole on the quesadilla slices and squeeze a lime wedge over them just before eating.
