Prepare aromatics

Heat a large wide skillet or sauté pan over medium heat. Add the vegetable oil or lard and let it warm for 30 seconds. Add the finely chopped onion and cook, stirring occasionally, until soft and translucent, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown it.

Season

Stir in the ground cumin and chili powder and cook 20–30 seconds to toast the spices, which brings out more flavor.

Add beans and mash

If using cooked whole pinto beans: add the beans to the skillet with 1/2 cup of the water or broth. Use a sturdy potato masher or the back of a large spoon to mash the beans to a smooth or slightly chunky texture, as you prefer. If using canned prepared refried beans: add them directly and stir to incorporate with the aromatics, thinning with up to 1/4–1/2 cup water or broth to reach a spreadable consistency.

Adjust consistency and seasoning

Continue cooking the beans over medium-low heat, stirring frequently, for 6–10 minutes until the mixture is hot and has the desired thickness. Add up to the remaining 1/4 cup water or broth if the beans are too stiff. Taste and season with salt, black pepper, and the optional lime juice. Keep warm until assembly.

Assemble for catering pan (hot holding or buffet)

Preheat oven to 350°F (175°C) if you plan to bake for service. Spread the warm refried beans in an even layer in one or more large catering pans or shallow hotel pans. Distribute the shredded jack cheese evenly over the top of the beans. Sprinkle the optional crumbled queso fresco or cotija in spots for texture and flavor if using.

Melt cheese (two options)

Oven: place the pan(s) in the preheated oven for 8–12 minutes, until the cheese is fully melted and bubbling. Steam table/hot holding: cover pans tightly with foil and place under the steam table or warmer for 15–20 minutes until cheese is melted, checking periodically to avoid drying out. If you prefer a browned top, use the oven broiler for 1–2 minutes while watching closely.

Garnish and serve

Once the cheese is melted, remove from heat. Garnish with chopped cilantro and pickled or fresh jalapeños if desired. Serve immediately with tortillas, chips, or as part of a taco/burrito assembly line. Keep leftover pans covered and warm; reheat gently and stir before serving to maintain creaminess.
