Prepare Duck Confit

Season the duck legs with salt, black pepper, thyme, and crushed garlic. Place them in a heavy pot and cover with duck fat. Cook on low heat for 2-3 hours until the meat is tender and can be easily pulled from the bone.

Shred Duck Meat

Once cooked, remove the duck legs from the pot and let them cool slightly. Shred the meat, discarding the bones and skin.

Assemble Sliders

On the bottom half of each brioche bun, layer a generous amount of shredded duck confit, a spoonful of onion jam, a handful of arugula, and drizzle with demi-glace. Top with the other half of the bun.

Serve

Serve immediately while warm, accompanied by extra demi-glace on the side if desired.
