Prepare the Fries

Cook the Fries

In a large pot or deep fryer, heat the vegetable oil to 180°C (350°F). Add the frozen French fries in batches and cook according to package instructions until golden brown and crispy. Remove from the oil and drain on paper towels.

Make the Bacon Jam

Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and place it on paper towels to drain excess fat. Reserve about 2 tablespoons of bacon fat in the skillet.

Sauté the Onions

In the same skillet, add the chopped onions to the reserved bacon fat. Sauté until the onions are soft and translucent, about 5-7 minutes.

Combine Ingredients

Chop the cooked bacon and add it back to the skillet with the onions. Stir in the brown sugar, balsamic vinegar, and black pepper. Cook until the mixture thickens and becomes jam-like, about 10-15 minutes. Remove from heat and let cool slightly.

Prepare the Cheese Sauce

Make the Roux

In a saucepan over medium heat, melt the butter. Once melted, whisk in the all-purpose flour and cook for about 1-2 minutes until it turns a light golden color.

Add Milk

Gradually whisk in the milk, continuing to whisk until the mixture is smooth and thickened, about 5 minutes.

Add Cheese and Season

Remove from heat and stir in the shredded cheddar cheese and salt until the cheese is fully melted and the sauce is smooth.

Assemble the Loco Fries

Layer the Ingredients

On a serving platter, layer the crispy fries, spoon over the bacon jam generously, and drizzle the cheese sauce over the top.

Garnish

Finally, sprinkle the chopped parsley over the loaded fries for freshness and color. Serve immediately.
