Tea Base

Method

Tea Base

  1. 1

Bring 6 cups of filtered water to a near boil in a saucepan or kettle.

  2. 2

Remove from heat and steep the black tea (3 tbs if using loose-leaf, or 3 tea bags) for 4–5 minutes for a robust base that will stand up to fruit flavors. Avoid over-steeping to prevent bitterness.

  3. 3

Remove tea bags or strain out tea leaves. While the tea is still warm, stir in 1 tablespoon sugar (or dissolve preferred sweetener) until fully dissolved. Allow the tea to cool to room temperature, then chill in the refrigerator (about 20–30 minutes) while preparing fruit purees.

Fruit Purees & Mix-Ins

  1. 4

    Prepare Raspberries

Place 3 cups raspberries in a blender or food processor. Pulse until smooth. If you prefer a seedless texture, press the puree through a fine-mesh sieve into a bowl, using the back of a spoon to push through the juice (reserve the solids for another use).

  2. 5

    Prepare Mango & Peach

In the clean blender, add 1.5 cups mango and 1 cup peach. Blend until silky smooth. If mixture is very thick, add up to 1/4 cup of the cold water to help it blend smoothly.

  3. 6

    Prepare Strawberries

Pulse 1 cup strawberries in the blender until coarsely pureed. Leave a little texture so you get bits of strawberry in the final tea.

  4. 7

Combine the three purees in a large bowl or pitcher: raspberry puree, mango-peach puree, and strawberry puree. Stir in 2 teaspoons fresh lemon juice to brighten flavors. Taste and, if you want a sweeter drink, stir in up to 1 tablespoon honey or agave syrup. If the mixture is too thick, add cold water (up to 1 cup) until you reach a pourable consistency.

  5. 8

Strain combined fruit mixture through a coarse strainer into a pitcher if you prefer smoother texture; otherwise leave as-is for more body.

Assemble & Serve

  1. 9

To make the flavored tea, pour the chilled black tea into the pitcher with the fruit mixture. Start with a 1:1 ratio (about 3 cups tea to 3 cups fruit mixture) and stir gently to combine. Adjust to taste — add more tea if you prefer a lighter fruit presence, or more puree for a richer, fruit-forward drink.

  2. 10

Add ice cubes (about 3 cups) to the pitcher or to individual glasses. Stir gently to chill and dilute slightly.

  3. 11

Taste and adjust sweetness or acidity: add more honey/agave or a splash more lemon juice if needed.

  4. 12

Serve over ice in glasses garnished with fresh mint leaves and slices of raspberry, mango, peach, or strawberry.

  5. 13

Store any leftover flavored tea in a covered pitcher in the refrigerator for up to 48 hours. Stir before serving as some settling may occur.
