Preparation

Cook the Lobster

Bring a large pot of salted water to a boil. Add the Maine lobsters and cook for about 8-10 minutes until they turn bright red. Remove and plunge into ice water to stop the cooking.

Prepare the Crab

Steam the Dungeness crab for about 15-20 minutes until heated through. Remove from the pot and let cool before cracking open.

Shuck the Oysters

Using an oyster knife, carefully shuck the Hog Island oysters and place them on a serving platter. Keep them on the half shell.

Prepare the Ahi Tuna

Slice the ahi tuna into thin sashimi-style pieces. Arrange on a plate and season with sea salt and a drizzle of olive oil.

Cook the Prawns

Bring a pot of salted water to a boil. Add the Gulf prawns and cook for about 3-5 minutes until they turn pink. Remove and chill in ice water.

Assembly

Plate the Seafood

On a large platter or seafood tower, arrange the chilled lobster, crab, oysters, ahi tuna, and prawns. Add lemon wedges and sauces on the side for dipping.
