Prepare the Raspberry Filling

In a small saucepan, combine fresh raspberries and half of the powdered sugar. Heat over medium heat until the raspberries break down and release their juices, about 5 minutes. Remove from heat and strain through a fine mesh sieve to remove the seeds. Set aside to cool.

Make the Chocolate Ganache

In a separate saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the dark chocolate, stirring until melted and smooth. Stir in vanilla extract.

Combine and Chill

In a mixing bowl, combine the raspberry puree with the chocolate ganache. Mix until well combined. Pour the mixture into a shallow dish and refrigerate for about 30 minutes, or until firm enough to scoop.

Form the Truffles

Once the mixture is firm, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter). Roll each ball in cocoa powder to coat. Insert a lollipop stick into each truffle.

Add the Pop Rocks

Once the truffles are formed, sprinkle the pop rocks candy on top of each truffle while the chocolate is still slightly warm (if necessary, return to the fridge for a few minutes to firm up again). This will help the pop rocks stick to the truffles.

Chill Again

Place the lollipops on a tray lined with parchment paper and refrigerate until set, about 15-20 minutes.
