Prepare Brussels Sprouts

Preheat the oven to 400°F (200°C). Trim and halve the Brussels sprouts, then toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden and tender.

Cook the Apple

While the Brussels sprouts are roasting, peel and core the Granny Smith apple. Cut it into thin slices. In a skillet, melt 2 tablespoons of butter over medium heat. Add the apple slices and sauté until they are golden and caramelized, about 5-7 minutes. Set aside.

Prepare Citrus Beurre Blanc

In a saucepan, melt 1 tablespoon of butter over medium heat. Add the chopped shallots and sauté until soft. Pour in the white wine and let it reduce by half. Stir in the heavy cream and let it simmer until slightly thickened. Add the citrus juice, and season with salt and pepper. Remove from heat and whisk in the remaining butter until melted and smooth.

Cook Salmon

Season the Ora King salmon fillets with salt and pepper. In a large skillet, heat 1 tablespoon of butter over medium-high heat. Place the salmon fillets skin-side down and cook for about 5-6 minutes, then flip and cook for another 3-4 minutes, or until cooked to your desired doneness.

Plate the Dish

On each plate, arrange the roasted Brussels sprouts, top with a salmon fillet, add the sautéed apple slices, and drizzle with citrus beurre blanc. Serve immediately.
