Preparation Instructions
Cure the Pork
In a large bowl, mix bourbon, salt, brown sugar, black pepper, and garlic powder. Submerge the pork shoulder in the brine, cover, and refrigerate for 3 days.
Cook the Pork
After 3 days, remove the pork from the brine and rinse under cold water. Pat dry and roast in a preheated oven at 300°F (150°C) for 3-4 hours until tender. Let cool and slice thinly.
Make Pimento Cheese Spread
In a mixing bowl, combine cream cheese, shredded cheddar cheese, spicy mustard, and mix until smooth.
Prepare Potato Salad
Boil potatoes until tender, then cube. In a bowl, mix cubed potatoes, mayonnaise, Dijon mustard, salt, and pepper to taste.
Assemble the Sandwich
Spread pimento cheese on a slice of bread, layer with sliced pork, pickled jalapeños, and fried onions. Top with another slice of bread.
