Marinate the Pork

In a large bowl, combine the pork riblets with salt, black pepper, minced garlic, and tamarind paste. Mix well to coat the pork and let it marinate for at least 1 hour or overnight in the refrigerator for more flavor.

Prepare the Vegetables

While the pork is marinating, finely chop the jalapeño and onion. Set them aside.

Coat the Pork

After marination, remove the pork riblets from the refrigerator. Dredge each riblet in toasted rice powder until fully coated.

Fry the Pork

Heat vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the coated riblets in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes per side.

Sauté the Vegetables

In a separate pan, sauté the chopped jalapeño and onion in a little oil over medium heat until soft and fragrant, about 5 minutes.

Serve

Once the riblets are crispy, remove them from the oil and drain on paper towels. Serve hot with the sautéed jalapeño and onion on top.
